Directions:

Grits

  1. Cook grits per package instructions. Grits thicken quickly and continue to thicken as they sit. Cooking them fully ensures they stay creamy when plated.
  2. When they look thick and start pulling away from the sides of the pot, stir in cheddar + 2 tablespoon butter.
    • This is the moment when the starch is fully hydrated.
