This In‑N‑Out inspired burger bowl is everything I love about a good meal prep recipe: simple ingredients, big flavor, and a creamy special sauce that makes the whole thing irresistible. It's gluten‑free, high‑protein, and easy to customize, so you can enjoy classic burger flavors in a fresh, balanced way throughout your week.

This bowl was inspired by my love of In‑N‑Out, specifically their Animal Style burger and fries. I wanted something that delivered the same nostalgic flavors in a fresher, lighter, gluten‑free way that actually works for meal prep. I was also craving something different from the "same old" meal prep rotation but was still easy enough to throw together on a busy weeknight. This burger bowl checks every box: simple ingredients, great flavor, reheats beautifully, and gives you all the satisfaction of an In‑N‑Out run without leaving your kitchen, enduring a 20‑minute drive, or worrying about a high calorie count!

- American, cheddar or Coby Jack cheese
- Garlic powder
- Salt

See recipe card for quantities.
Instructions

Step 1: Cook beef: Heat a skillet over medium-high heat. Add ground beef and break apart. Stir in mustard, ultimate burger seasoning, and optional Worcestershire sauce. Cook until browned, around 7-10 minutes.

Step 2: Caramelize onions: Heat a medium skillet over medium-high heat. Add avocado oil and diced onions with a pinch of salt and an optional pinch of sugar. Cook until onions begin to soften (3-4 minutes), turn down heat to medium, and continue to cook for around 10 minutes until onions turn golden.

Step 3: Roast potatoes. Preheat oven to 425 degrees. Toss diced potatoes with oil, garlic powder, salt and pepper. Roast for 25-30 minutes, flipping half way.

Step 5: Assemble bowls with potatoes and beef on the bottom, lettuce, pickles, tomatoes, caramelized onions and sauce on top.

Step 4: Make the special sauce. Combine mayo, ketchup, mustard, chopped pickles, and caramelized onions. Add pickle juice if you want it slightly thinner. Taste and adjust-more ketchup for sweetness, more mustard for tang.
Hint: Place the cheese on beef right after cooking. Let the beef and cheese rest for 2-3 minutes. This helps the flavors settle and gives the cheese time to melt into the meat, making the bowl taste even more like a classic In‑N‑Out burger.
Substitutions
Ground Beef
I use 90/10 ground beef because the bowl has plenty of flavor and richness already, but you can easily swap based on preference:
- 85/15 or 80/20 beef: Juicier and richer; great if you want a more "classic burger" flavor.
- Ground turkey (93/7 or 90/10): A lighter option with a slightly different flavor profile. Add an extra splash of oil if using very lean turkey.
- Veggie meat crumbles: A great vegetarian option. Season generously since plant‑based crumbles tend to be milder.
- Ground chicken: Works, but benefits from extra seasoning and a little added oil.
Lettuce
- Iceberg: The closest to the classic In‑N‑Out texture-super crunchy.
- Romaine: More nutrients, but still crisp.
- Green leaf lettuce: Softer, but still works if you prefer a gentler texture.
- Shredded cabbage: Great for meal prep because it stays crisp for days.
Pickles
Pickles add tang and crunch, and you have plenty of options:
- Bread‑and‑butter pickles: Sweeter, more "special sauce" vibes.
- Dill relish: Easiest swap for chopped pickles in the sauce.
- Pickled jalapeños: For a spicy twist.
- Pickled onions: Adds tang without the cucumber flavor.
Mayo (for the special sauce)
- Avocado oil mayo: Clean ingredients, great flavor.
- Regular full‑fat mayo: Richer and creamier.
- Greek yogurt (½ yogurt + ½ mayo): Lightens it up while keeping a good texture.
- Vegan mayo: Perfect for dairy‑free or egg‑free diets.
Cheese
Any melty cheese will work well:
- American cheese: Most "In‑N‑Out" flavor.
- Cheddar: Sharper, more savory.
- Colby Jack: Mild and melty.
- Swiss or provolone: For a different twist.
- Vegan cheese shreds: Use a meltable brand for best results.
Burger Seasoning
If you don't have Ultimate Burger seasoning, don't worry:
- Salt + pepper + garlic powder + onion powder
- Montreal steak seasoning
- Smoked paprika + garlic powder + salt
- Any favorite all‑purpose seasoning blend
Other Helpful Swaps
- Potatoes: Swap with roasted cauliflower or zucchini for lower‑carb bowls.
- Mustard: Dijon works if you want a deeper flavor; yellow mustard is a classic.
- Tomatoes: Cherry tomatoes hold up better in meal prep.

Storage
Store Components Separately
For the freshest texture, keep the hot and cold ingredients in separate containers:
- Beef + potatoes in one container
- Lettuce, tomatoes, pickles, onions in another
- Special sauce stored separately in a small jar or condiment cup
This prevents the lettuce from wilting and keeps the potatoes crisp.
Refrigeration
- The cooked beef and roasted potatoes will keep well for 3-4 days.
- The chopped veggies stay fresh for 2-3 days (iceberg and cabbage last longest).
- The special sauce keeps for up to 1 week.
Reheating
Reheat the beef and potatoes together in the microwave for 45-60 seconds, or warm them in a skillet for the best texture.
- Keep the lettuce and fresh toppings cold, then assemble your bowl right before eating.
Meal Prep Tip
If prepping for multiple days, store lettuce in a container lined with a paper towel to absorb moisture and keep it crisp.
Freezing
- The beef freezes well for up to 3 months.
- Potatoes can be frozen, but texture is softer when thawed.
- Do not freeze lettuce, tomatoes, pickles, or sauce.
Top Tip
Keep the hot and cold components separate until serving. Reheat the beef and potatoes, then add the fresh toppings and sauce. This keeps the lettuce crisp and the potatoes from getting soggy-especially important for meal prep.
FAQ
You can definitely make it lower carb. Swap the potatoes for roasted cauliflower, sautéed zucchini, or shredded cabbage. The bowl becomes very low‑carb while keeping all the flavor. You can also use sugar-free ketchup. If you are aiming towards keto, I have not run the macros, but cutting out the roasted veggies and using a sugar-free ketchup would make this a very low carb recipe (under 10gm of carbs).
Can I make the sauce lighter?
Yes, you could do half fat free yogurt (around 2.5 tablespoons) and half mayo (about 2.5-3 tablespoons). The recipe makes about 1 cup total of sauce or ¼ cup per bowl, so you can use less sauce, around 1-2 tablespoons, to reduce calories and fat (calories lower around 50 per tablespoon and fat by about 5gm per tablespoon).
Can I freeze the sauce?
Technically yes, but it's not recommended. Mayo‑based sauces separate when frozen and thawed. It's best stored in the fridge for up to 1 week.
Yes-as long as your mustard, ketchup, and pickles are gluten‑free (most are, just double check). No buns needed.
