Ingredients
- 3 cups chopped or thinly sliced green cabbage I chopped mine because I wanted it super easy
- 1-2 tablespoons olive oil
- Juice of ½ lemon about 1½-2 tbsp
- 1 small clove garlic grated or pressed or ¼ teaspoon garlic powder
- 2-3 tablespoons Parmesan
- ½ teaspoon Dijon mustard
- ½ teaspoon sugar or sugar substitute
- salt + black pepper to taste
- 1 oz mozzarella optional
Instructions
- Add the sliced cabbage to a large mixing bowl.
- In a small bowl, whisk together olive oil, lemon juice, garlic, Parmesan, Dijon, sugar, salt, and pepper.
- Pour the dressing over the cabbage and toss very well - cabbage needs a good massage to soften slightly.
- Let it sit 5-10 minutes so the flavors absorb and the cabbage softens.
