Ingredients
- 4 cups greens such as spinach or arugula or spring mix I used a mix of arugula and spinach
- 1 cups of chopped chicken I used rotisserie chicken
- 1 small apple sliced red or green
- 3 tablespoons pecans
- 2-3 oz goat cheese
- 1.5 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon dijon mustard
- 1-2 teaspoons sugar or sugar substitute
- pinch of salt optional
Instructions
- Place greens into a large bowl.
- Top with chicken, apple, pecans and goat cheese.
- In a small bowl, whisk together olive oil, vinegar, mustard and sweetener.
- Drizzle dressing to your preference over salad and toss.
- Serve alone or with garlic bread (gluten-free as needed)
