Ingredients

4 cups greens such as spinach or arugula or spring mix I used a mix of arugula and spinach
1 cups of chopped chicken I used rotisserie chicken
1 small apple sliced red or green
3 tablespoons pecans
2-3 oz goat cheese
1.5 tablespoons olive oil
2 tablespoons apple cider vinegar
1 teaspoon dijon mustard
1-2 teaspoons sugar or sugar substitute
pinch of salt optional

Instructions

Place greens into a large bowl.
Top with chicken, apple, pecans and goat cheese.
In a small bowl, whisk together olive oil, vinegar, mustard and sweetener.
Drizzle dressing to your preference over salad and toss.
Serve alone or with garlic bread (gluten-free as needed)
