This easy 4‑ingredient peanut butter fudge comes together in minutes and sets into the perfect creamy‑firm texture. It's naturally gluten‑free, high in protein, and diabetes‑friendly-a simple sweet treat you can feel good about keeping in the fridge for quick snacks or after‑dinner bites.

Ingredients
  

  • 1 cup peanut butter
  • ¼ cup sugar-free or regular maple syrup
  • 1 tablespoon Greek yogurt optional but adds moisture to keep fudge from being too dry
  • 1 teaspoon vanilla optional
  • ½ cup vanilla or chocolate protein powder

Instructions
 

  • In a medium size bowl, combine peanut butter, syrup, Greek yogurt and vanilla.
  • Add protein powder and mix until smooth.
  • Spread into an 8x8 or small dish.
  • Cover and chill for at least 1 hour before serving (up to 2-3 days in an airtight container).
  • Enjoy!

Notes

Nutrition facts are based on using sugar-free syrup. If using regular maple syrup, nutrition facts change to: 165 calories, 9g of carbs, 1.5g fiber, 6gm sugar, 10g protein.
