
Airfryer Spinach and Artichoke Chicken

Ingredients
Chicken and Filling
- 3-4 each thinly sliced chicken breast
- ½ cup spinach and artichoke dip (ensure gluten-free_)
- ⅓ cup shredded mozzarella cheese (can substitute with feta for sharper flavor)
- ¼ teaspoon salt
Coating
- 1 egg beaten
- ½ cup almond flour
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- 1 tablespoon Grated Parmesan
- avocado oil spray
Instructions
- Prep chicken. Lay chicken breast flat and lightly season both sides with salt and pepper.
- Mix spinach-artichoke dip and cheese.
- Spread 1-2 tablespoon of mix onto each chicken breast.
- Roll chicken tightly. Secure with toothpick if needed.
- Set up coating: Mix almond flour, garlic powder, onion powder, Italian seasoning and parmesan in a small bowl.
- Place egg in separate bowl and beat.
- Dip each rolled chicken breast into the egg then dredge in almond flour mixture.
- Air fry. Preheat air fryer to 400 degrees.
- Spray basked with avocado oil. Place chicken rolls in the basket with spaces in between them. Top with avocado oil spray.
- Air fry 15-18 minutes, flipping half-way until chicken reaches internal temperature of 165 degrees.
- Let rest 3-5 minutes.
- Slice into rounds or serve whole.
