This easy Chicken Apple Pecan Salad with Goat Cheese is naturally gluten‑free, diabetes‑friendly, and packed with fresh flavor. Crisp apples, toasted pecans, juicy chicken, and creamy goat cheese come together in a bright, crunchy salad that works beautifully for spring or summer. It's simple to make, nourishing, and perfect for quick lunches or light dinners.

Ingredients
  

  • 4 cups greens such as spinach or arugula or spring mix I used a mix of arugula and spinach
  • 1 cups of chopped chicken I used rotisserie chicken
  • 1 small apple sliced red or green
  • 3 tablespoons pecans
  • 2-3 oz goat cheese
  • 1.5 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1-2 teaspoons sugar or sugar substitute
  • pinch of salt optional

Instructions
 

  • Place greens into a large bowl.
  • Top with chicken, apple, pecans and goat cheese.
  • In a small bowl, whisk together olive oil, vinegar, mustard and sweetener.
  • Drizzle dressing to your preference over salad and toss.
  • Serve alone or with garlic bread (gluten-free as needed)
