This easy 4‑ingredient peanut butter fudge comes together in minutes and sets into the perfect creamy‑firm texture. It's naturally gluten‑free, high in protein, and diabetes‑friendly-a simple sweet treat you can feel good about keeping in the fridge for quick snacks or after‑dinner bites.
Ingredients
- 1 cup peanut butter
- ¼ cup sugar-free or regular maple syrup
- 1 tablespoon Greek yogurt optional but adds moisture to keep fudge from being too dry
- 1 teaspoon vanilla optional
- ½ cup vanilla or chocolate protein powder
Instructions
- In a medium size bowl, combine peanut butter, syrup, Greek yogurt and vanilla.
- Add protein powder and mix until smooth.
- Spread into an 8x8 or small dish.
- Cover and chill for at least 1 hour before serving (up to 2-3 days in an airtight container).
