
Healthy Shrimp and Grits (Classic Southern Flavor, Lightened Up)

Ingredients
- ½ cup quick grits 5 minute
- 2 cups water or milk
- ½ cup cheddar cheese
- ¼ teaspoon salt
- 1 pound shrimp
- 3 tablespoons butter or healthy butter spread divided
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ¼ teaspoon salt optional
- ¼ teaspoon black or red pepper
- 2 garlic cloves
- ½ cup broth
- 1 tablespoon lemon juice
- 1-2 tablespoons Greek yogurt takes the place of flour to thicken while keeping gluten-free
Instructions
Grits:
- Boil or microwave grits per package instructions.
- When almost done, mix in cheddar and 2 tablespoons of butter and stir until blended.
Shrimp:
- If using frozen shrimp, rinse with cool water in colander for 2-5 minutes until shrimp is thawed. Pat shrimp dry.
- Season shrimp with paprika, garlic powder, pepper, and salt (if using).
- Add 1 tablespoon of butter or butter spread to pan.
- Sauté shrimp over medium heat for 1-3 minutes per side or until no longer transparent.
- Remove shrimp and place in a separate plate or dish.
Sauce:
- Add garlic and sauté for 2-3 minutes.
- Add lemon juice and broth and simmer for 5 minutes.
- Remove from heat and stir in yogurt until thickens.
