Homemade Peanut Butter Chocolate Chip Protein Bars

These have been my favorite lately. They remind me of the Zone bars as they are chewy, just the right amount of sweet and keep you full for hours. The fact that they are homemade is an extra bonus so you can control the ingredients! These are easy, no‑bake, gluten‑free, packed with protein and can be made low sugar to keep them diabetes friendly. Great for meal‑prep‑or a quick snack. Dietitian and kid approved (by my picky eater 7-year-old!) as well!

Ingredients
  

  • ½ cup PB 2 powder
  • ½ cup whey protein powder
  • ½ cup almond flour
  • ⅓ cup plain Greek yogurt
  • 2 tablespoons maple syrup or sugar-free syrup
  • 1 tablespoon butter or butter spread melted (optional)
  • ¼ cup chocolate chips optional

Instructions
 

  • Add dry ingredients (PB2, protein powder and almond flour to a small bowl)
  • Add in yogurt, maple syrup, and melted butter.
  • Stir until blended then finish blending and folding by hand to mix well.
  • Place in an 8x8 or smaller dish.
  • Let set in refrigerator for 1 hour or greater to set.
  • Slice into 6 equal pieces.
  • Enjoy!

Notes

Nutrition facts use sugar-free syrup. If using regular, nutrition facts would change to: 190 calories, 13gm carbs, 6gm sugar. All other nutrition facts would stay the same.
