Easy Gluten‑Free Steak Skewers (Simple Marinade + Veggies)

schaudhari
These Easy Gluten‑Free Steak Skewers are the kind of real‑life dinner you can throw together on a busy weeknight without sacrificing flavor. Tender sirloin (or flank or filet) gets tossed in a quick marinade made with olive oil, garlic, lemon, tamari, and herbs - simple ingredients that pack big flavor without added sugar.
This recipe is naturally gluten‑free, diabetes‑friendly, and low in sugar, making it a balanced option for anyone wanting a satisfying meal that supports steady blood sugars. Add your favorite veggies, thread everything onto skewers, and grill or roast until perfectly charred.
It’s customizable, meal‑prep friendly, and easy to scale for family dinners or weekend cookouts — a fresh, colorful, and nourishing dinner that fits right into real life.

Ingredients

  • 1 lbs sirloin flank steak, or filet cut into 1.5-inch cubes (I used fillet)
  • 3 tablespoons of olive or avocado oil
  • 1 clove garlic minced
  • 1 tablespoons lemon juice
  • 1 tablespoon Tamari
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • 2-3 cups veggies cut into chunks (bell peppers, red onion, zucchini, mushrooms etc)

Instructions

  • Whisk olive oil, garlic, lemon juice, Tamari, Italian seasoning, and pepper in a bowl.
  • Add steak cubes and vegetables to the marinade and toss to coat. Marinate 20-60 minutes up to 4 hours.
  • Thread marinated steak and veggies onto skewers, alternating pieces.
  • Grill over medium high heat 8-12 minutes, turning occasionally, until steak reaches desired doneness.
  • For oven: roast/broil on broiling temp or 425 degrees for 8-10 minutes, flipping halfway (or until steak reaches preferred doneness)
  • Let skewers rest 5 minutes.

Notes

If you would like to make these lower in fat, you can reduce oil to 2 tablespoons and add a splash of water without losing much flavor or texture. This will reduce calories to 370, fat to 27gm. All other nutrition facts remain the same.
