
Buffalo Chicken Tortilla Pizza- Gluten-Free, Easy and Lower-Carb
A crispy, gluten‑free tortilla pizza loaded with bold buffalo flavor - perfect for meal prep, quick weeknight dinners, and family‑friendly eating.
Equipment
- 1 baking sheet
Ingredients
- 4 gluten-free tortillas I used Extreme Wellness Gluten-Free
- ½ cup of shredded cheese of choice I used mozzarella, but you can also use cheddar
- ½ cup of buffalo sauce divided
- 1 cup of shredded chicken I used rotisserie
- ½ cup chopped vegetables divided (red onion, spinach, mushrooms etc) optional
Instructions
- Preheat oven to 425 degrees F.
- Grease pan.
- Place tortillas on baking sheet.
- Spread 1-2 tablespoons of sauce on each tortilla.
- Place chicken in a small bowl and toss shredded chicken with remaining sauce.
- Add chicken, shredded cheese and optional vegetables to tortillas.
- Place tortillas onto baking sheet and bake 8-10 minutes or until edges are golden and cheese is bubbly.
Notes
These can be made in the air fryer as well by air frying for 2-3 minutes at 375 degrees.
