Ingredients
  

  • 3 cups chopped or thinly sliced green cabbage I chopped mine because I wanted it super easy
  • 1-2 tablespoons olive oil
  • Juice of ½ lemon about 1½-2 tbsp
  • 1 small clove garlic grated or pressed or ¼ teaspoon garlic powder
  • 2-3 tablespoons Parmesan
  • ½ teaspoon Dijon mustard
  • ½ teaspoon sugar or sugar substitute
  • salt + black pepper to taste
  • 1 oz mozzarella optional

Instructions
 

  • Add the sliced cabbage to a large mixing bowl.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, Parmesan, Dijon, sugar, salt, and pepper.
  • Pour the dressing over the cabbage and toss very well - cabbage needs a good massage to soften slightly.
  • Let it sit 5-10 minutes so the flavors absorb and the cabbage softens.
