Low‑Carb Pizza Casserole (Gluten‑Free and Diabetes Friendly)

This Low Carb Pizza Casserole has all the flavors of your favorite pizza, but in a simple, gluten‑free, diabetes‑friendly bake that comes together fast. Made with lean ground turkey or beef, marinara, over 2 cups of veggies, and plenty of melty mozzarella, it's a cozy weeknight dinner that supports balanced blood sugars without sacrificing flavor. It's high‑protein, family‑friendly, and perfect for anyone who wants a satisfying meal that fits into a low‑carb lifestyle. You can serve it by itself, over spaghetti squash, regular pasta or with a slice of garlic bread of choice.

Ingredients
  

  • 1 pound ground beef or turkey I used 85/15 ground beef
  • 16 oz marinara sauce
  • 1 diced green bell pepper
  • ¾ cup sliced mushrooms
  • ¼ cup sliced black olives optional
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¾ cups shredded mozzarella cheese
  • 12-15 slices small turkey pepperoni or regular pepperoni or 5-10 large

Instructions
 

  • Preheat oven to 375°F.
  • In a large skillet, brown the ground turkey or beef over medium heat. Drain excess fat if needed.
  • Add bell pepper and mushrooms and cook 3-4 minutes until slightly softened.
  • Stir in Italian seasoning, garlic powder, salt, and pepper.
  • Pour in the marinara and stir to combine. Simmer 2 minutes.

Assemble the casserole:

  • Transfer mixture to an 8×8 or 9×9 baking dish.
  • Top with mozzarella cheese, and pepperoni slices.
  • Bake 18-22 minutes, or until cheese is melted and bubbly with lightly browned edges.
  • Let cool 5 minutes before slicing. Serve with a simple side salad or roasted veggies.
