This 4‑ingredient (plus some optional pantry staples) sheet‑pan sausage with cabbage and onions is naturally low‑carb, gluten‑free, and perfect for diabetes‑friendly meals. A quick, cozy dinner that comes together with minimal prep and simple pantry staples.

Ingredients
  

  • 8-12 oz chicken or turkey sausage flavor of choice. (I used gouda and apple. Ensure your variety is gluten-free if following a gluten-free diet.)
  • ¾ head of cabbage sliced (about 3 cups)
  • 1 medium onion sliced
  • 2 tablespoons avocado oil

Optional pantry staples:

  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon pepper

Instructions
 

  • Preheat oven to 425 degrees. Coat with oil or cooking spray.
  • Spread cabbage and onions on baking sheet.
  • Drizzle oil on top vegetables.
  • Sprinkle with seasonings if using.
  • Toss with tongs or by hand until oil and seasonings coat vegetables evenly.
  • Add sausage slices on top of vegetables, disperse evenly.
  • Roast for 18-25 minutes, stirring halfway, until cabbage is wilted and sausages cooked thoroughly.
  • Serve with rice, on top of a toasted sub or by itself.

Notes

Most of the sugar in the recipe comes from the cabbage's naturally occuring sugar.
