
Crockpot Greek Chicken

- 1 crockpot
Ingredients
- 1.5 pounds chicken breast
- 1 cup marinated artichoke hearts rinsed and drained
- 1 cup sun-dried tomatoes
- ½ cup Greek dressing of choice
- ½ small red onion diced
- 3 cloves garlic minced
- 1 teaspoon oregano
- ½ teaspoon basil
- 4 oz chicken broth
- 1 cup spinach
- salt and pepper to taste
- 3 oz feta
Instructions
- Place the chicken in the bottom of the crock pot.
- Add the sun‑dried tomatoes, artichokes, garlic and onion
- Sprinkle oregano, basil, salt, and pepper over everything.
- Pour the Greek dressing and broth evenly over the chicken and vegetables.
- Cover and cook on: Low for 4-6 hours (best texture)
- or high for 2-3 hours, until chicken reaches 165 degrees.
- Add feta and cook last 5-10 minutes.
