Equipment

  • 1 crockpot

Ingredients
  

  • 1.5 pounds chicken breast
  • 1 cup marinated artichoke hearts rinsed and drained
  • 1 cup sun-dried tomatoes
  • ½ cup Greek dressing of choice
  • ½ small red onion diced
  • 3 cloves garlic minced
  • 1 teaspoon oregano
  • ½ teaspoon basil
  • 4 oz chicken broth
  • 1 cup spinach
  • salt and pepper to taste
  • 3 oz feta

Instructions
 

  • Place the chicken in the bottom of the crock pot.
  • Add the sun‑dried tomatoes, artichokes, garlic and onion
  • Sprinkle oregano, basil, salt, and pepper over everything.
  • Pour the Greek dressing and broth evenly over the chicken and vegetables.
  • Cover and cook on: Low for 4-6 hours (best texture)
  • or high for 2-3 hours, until chicken reaches 165 degrees.
  • Add feta and cook last 5-10 minutes.
