
Gluten-Free Meatballs with Almond Flour
Juicy, gluten‑free almond flour meatballs that are low‑carb, high‑protein, and perfect for weeknight dinners or meal prep.
Ingredients
- 1 lb ground beef or turkey I used ground sirloin
- ¼ cup onion diced (alternatively, can use 2 teaspoon onion powder)
- ¼ cup almond flour
- ¼ cup grated parmesan
- 1 teaspoon Italian seasoning
- ¼ teaspooon salt
- ½ teaspoon black pepper or ¼ teaspoon red pepper
- 1 teaspooon parsley optional
- 1 egg
- 2 cloves garlic minced (or ½ teaspoon garlic powder)
Instructions
- Chop onions and mince garlic.
- Mix all ingredients in a large bowl, mixing with a spoon or your hands, just until combined.
- Shape into 1-1.5 in meatballs (makes about 20)
Cook:
- Air fryer: Preheat to 390 degrees. Spray basket. Cook for 10-12 minutes, shaking halfway.
- Oven: Preheat to 400 degrees. Bake 15-18 minutes.
