Gluten-Free Meatballs with Almond Flour

Ingredients
  

  • 1 lb ground beef or turkey I used ground sirloin
  • 2-3 tablespoons onion diced (alternatively, can use 1.5 teaspoon onion powder)
  • ¼ cup almond flour
  • 2 tablespoons grated parmesan
  • 1 teaspoon Italian seasoning
  • ¼ teaspooon salt (optional, parmesan does give these a salty taste already)
  • ½ teaspoon black pepper or ¼ teaspoon red pepper
  • 1 teaspoon parsley optional
  • 1 egg
  • 2 cloves garlic minced (or ½ teaspoon garlic powder)
  • 2-4 tablespoons milk optional but to keep from drying, start with 2 tablespoons and add more if meatball mixture looks too dry.

Instructions
 

  • Chop onions and mince garlic.
  • Mix all ingredients in a large bowl, mixing with a spoon or your hands, just until combined.
  • Shape into 1-1.5 in meatballs (makes about 20)

Cook:

  • Air fryer: Preheat to 390 degrees. Spray basket. Cook for 10-12 minutes, shaking halfway.
  • Oven: Preheat to 400 degrees. Bake 15-18 minutes.
