Herbed Cauliflower Mash

schaudhari
This Herbed Cauliflower Mash is a cozy, veggie‑forward alternative to traditional mashed potatoes-naturally low‑carb, gluten‑free, and supportive of steady blood sugar. Steamed cauliflower blends with butter, herbed cream cheese, Parmesan, and a splash of milk for a silky, savory texture that feels like comfort food without the heaviness. It's the perfect quick weeknight side dish: no boiling, no draining, and no fuss. Serve it with chicken, steak, or roasted veggies for a simple, family‑friendly recipe that fits beautifully into reduced‑carb or gluten‑free eating patterns.

Ingredients

  • 12-16 oz bag steamed cauliflower
  • 1 tablespoon butter
  • 2 tablespoons herbed cream cheese
  • 1 tablespoon grated parmesan
  • 1-2 tablespoons milk start small, add to desired texture
  • ¼ teaspoon salt
  • black pepper to taste

Instructions

  • Steam the cauliflower in the microwave or stove per preference for 3-5 minutes.
  • Let it sit 1-2 minutes so excess moisture escapes. Poor out any excess liquid.
  • Transfer cauliflower to a food processor or blender.
  • Add butter, herbed cream cheese, Parmesan, salt, and pepper.
  • Blend or mash until mostly smooth.
  • Add milk a tablespoon at a time until it reaches desired creaminess.
  • Taste and adjust: Parmesan can make it thicker. Cream cheese will give a richer flavor.
