
Easy Sheet-Pan BBQ Pork, Sweet Potatoes & Green Beans
This BBQ pork, sweet potato, and green bean sheet‑pan dinner is gluten‑free, low‑stress, and naturally supportive of steady blood sugars. It's low‑carb, high in fiber, and packed with balanced flavor - a delicious weeknight meal the whole family will enjoy.
Ingredients
- 1 lb pork tenderloin
- ¼ teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ¼ cup BBQ sauce plus extra for brushing. I used Stubb's Spicey Sauce but feel free to use a lower sugar one or one of your choosing. Ensure is gluten-free if needed.
- 2 medium or 1 large sweet potatoes peeled + diced (½-¾ inch cubes)
- 3 cups green beans trimmed
- 1 medium red onion cut into wedges
- 2 tablespoon avocado oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- Black pepper to taste
Instructions
- Preheat oven to 425°F. Line a sheet pan with parchment.
- Mix seasonings in a small bowl
- Place pork and veggies on sheet pan or sheet pans.
- Drizzle oil and sprinkle spices evenly on top of pork and vegetables.
- Toss with olive oil, salt, pepper, garlic powder, and smoked paprika.
- Cook 35-40 minutes, brushing pork with more BBQ sauce and tossing vegetables halfway through.
- Cook until pork reaches internal temperature of 145 degrees Fahrenheit or until preferred doneness.
- Finish: Rest pork 5 minutes before slicing.
