¼cupBBQ sauceplus extra for brushing. I used Stubb's Spicey Sauce but feel free to use a lower sugar one or one of your choosing. Ensure is gluten-free if needed.
2medium or 1 large sweet potatoespeeled + diced (½–¾ inch cubes)
3cupsgreen beanstrimmed
1medium red onioncut into wedges
2tablespoonavocado oil
1teaspoongarlic powder
½teaspoonsmoked paprika

Instructions
Preheat oven to 425°F. Line a sheet pan with parchment.
Mix seasonings in a small bowl
Place pork and veggies on sheet pan or sheet pans.
Drizzle oil and sprinkle spices evenly on top of pork and vegetables.
