- Step 2: Caramelize onions: Heat a medium skillet over medium-high heat. Add avocado oil and diced onions with a pinch of salt and optional pinch of sugar. Cook until onions begin to soften (3-4 minutes) turn down heat to medium and continue to cook for around 10 minutes until onions turn golden.

- Step 3: Roast potatoes. Preheat oven to 425 degrees. Toss diced potatoes with oil, garlic powder, salt and pepper. Roast for 25-30 minutes, flipping half way.

- Step 5: Assemble bowls with potatoes and beef on the bottom, lettuce, pickles, tomatoes, caramelized onions and sauce on top.

- Step 4: Make the special sauce. Combine mayo, ketchup, mustard, chopped pickles, and caramelized onions.Add pickle juice if you want it slightly thinner. Taste and adjust - more ketchup for sweetness, more mustard for tang.
Hint: Place the cheese on beef right after cooking. Let the beef and cheese rest for 2-3 minutes. This helps the flavors settle and gives the cheese time to melt into the meat, making the bowl taste even more like a classic In‑N‑Out burger.
