These 5‑ingredient Chicken Verde Tostadas with Lime Crema are the perfect mix of fresh, creamy, and crunchy - all while staying naturally gluten‑free and lower in carbs. Shredded chicken simmers in salsa verde, then gets piled onto toasted corn tortillas and topped with a light Greek‑yogurt lime crema that tastes indulgent but stays healthy. Equipment

  • 1 crockpot/ slow cooker

Ingredients
  

  • 12 oz salsa verde
  • 16 oz chicken breast
  • 6 tablespoons plain Greek Yogurt
  • 2 tablespoons lime juice
  • 8 corn tortillas
  • 4 tablespoons chopped cilantro optional

Instructions
 

  • Add chicken breast and salsa verde to your crock pot.
  • Cook on Low for 4-6 hours or High for 2-3 hours or until chicken reaches 165 degrees.
  • Shredd the check in the crock pot or using two forks.
  • Stir chicken back in salsa verde to warm.
  • In a small bowl, mix Greek yogurt and Lime juice to make crema.
  • Make tortillas: Preheat oven to 400 degrees.
  • Place tortillas on a baking sheet and bake for 6-8 minutes, flipping halfway. (optional, can spray with cooking spray or oil).
  • Plate 2 tostadas per serving, serve with ¼ chicken, lime crema and cilantro if desired.
