  2. Cream the softened butter with the sugar and brown sugar in a large mixing bowl until the mixture becomes light and fluffy.
  3. Add the eggs, vanilla extract, and almond extract, mixing until everything is fully combined.
  4. In a separate bowl, whisk together the almond flour, gluten‑free all‑purpose flour, baking powder, and baking soda.
  5. Add the dry mixture to the wet ingredients and stir until a soft dough forms. If you want thicker, softer cookies, chill the dough for a short time before baking.
  6. Scoop the dough into portions on a lined baking sheet
  7. bake at 350°F until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet briefly before transferring them to a rack for at least 30 minutes to finish cooling.

How do I store these cookies?

Almond flour cookies store great because they have a little more fat. Keep them in an airtight container for 3-5 days or freeze for up to 3 months. To freeze, cool cookies completely and then wrap in foil or other wrapping of choice. 

What flour blends do you use?

I primarily use Cup 4 Cup or Pilsbury Gluten-free blend because I like the taste and consistency of these the most. 

I don't follow a gluten-free diet, do I have to use gluten-free flour?

No, if you are using the recipe to lower your carbohydrates or sugar intake or just looking for a slightly healthier cookie alternative, feel free to use all purpose flour.

Can I skip the all-purpose flour and use all almond flour?

You can but you likely won't get the intended result. Almond flour by itself likely will spread thin and give you crispy, lacey cookies rather than fluffy and chewy cookies. Adding an extra egg yolk and a tablespoon of coconut flour could help a little with the spreading. I intend on doing a full almond flour cookie recipe soon, I just like the texture and taste of the half and half better so that's what I've been making!

You can decrease the 1:1 flour to 1/3 cup and increase almond flour to 2/3 a cup and still get a good texture without any major changes to the rest of the recipe.
