Description

These lemon bars use almond flour instead of traditional flour to reduce the carbs and make them gluten-free. They can easily be made diabetes-friendly by switching the sugar for a sugar substitute as they use otherwise naturally low carb items.

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and line an 8x8 pan with parchment paper.

  3. Mix crust ingredients in a medium bowl.
  4. Press crust mixture into pan and bake 10 minutes.

  5. Wisk eggs, sugar, lemon juice, zest, and almond flour.

  6. Pour filling mixture over warm crust.

  7. Bake 18-22 minutes or until center is set.

  8. Cool for 30 minutes then chill for 1-2 hours.

  9. Top with powdered sugar if desired.
