Gluten-Free Banana Bread

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a small loaf pan.
  3. Mash bananas or place in food processor and blend until smooth.
  4. Add maple syrup, yogurt, vanilla, butter and oil and blend until smooth.

  5. Add 2 eggs. Stir until blended.

  6. In a medium bowl, mix 1:1 flour, almond flour, baking powder, baking soda, salt, and optional chia seeds and cinnamon.

  7. Add dry ingredients into wet and mix until smooth.
  8. Spread in loaf pan.
  9. Bake for 45-55 minutes until set in the middle and fork or toothpick comes out clean.
