
Gluten‑Free Strawberry Shortcake in a Jar (Easy, Fresh & Light)
These Gluten‑Free Strawberry Shortcake Jars are the perfect fresh, bright spring dessert - layered with juicy strawberries, fluffy gluten‑free shortcake, and lightly sweetened whipped cream. They're easy to assemble, naturally gluten‑free, and ideal for spring holidays, brunches, baby showers, or warm‑weather gatherings. Each jar is portion‑controlled, make‑ahead friendly, and bursting with sweet strawberry flavor, making them a light and refreshing dessert for spring or anytime you want something simple and delicious.
Ingredients
- ⅓ cup of heavy whipping cream
- 2 cups strawberries chopped
- 2 teaspoons lemon juice
- ½ teaspoon sugar or sugar substitute optional
- 8 small short-bread type cookies (I used Made Good vanilla cookies)
- 1 ½ cups vanilla yogurt of choice
Instructions
- Place chopped strawberries in a small bowl with lemon and optional sugar or sugar substitute. Stir and set aside.
- Place ⅓ cup of whipping cream in a cold bowl. Beat on high for 2-4 minutes until stiff peaks form.
- In another bowl, pour yogurt.
- Slowly fold whipping cream into yogurt.
- Take cookies and break into halves or mash, your preference.
- Take a small cup or jar and begin layering.
- Start with strawberries on the bottom, then whipping cream/yogurt then cookies. Repeat layers and top with extra whipping cream or strawberries if desired.
Notes
This dessert most definitely can be lightened and made more diabetes-friendly! Optional serving option: rather than using a jar, use a small clear cup. Layer with strawberries, then cream, then cookies, top with strawberries and cream but no additional layer of cookies. You can also use a lower sugar vanilla yogurt such as 2 Good or Tripple Zero. This would make 3 servings and change nutrition information to: 200 calories, 8 gm of fat, 4gm saturated, 83mg sodium, 21gm carbs, 3 gm fiber, 12gm sugar, 9.5gm protein
