This almond flour lemon mug cake is a low‑carb, gluten‑free dessert that's naturally low in sugar and supportive of steady blood sugars. Made with simple ingredients and ready in minutes, it's a bright, satisfying treat that actually keeps you full.

Ingredients
  

  • 3 tablespoons almond flour
  • 1 tablespoon sweetener allulose, monk fruit, or sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • ¼ teaspoon baking powder
  • 1 tablespoon almond milk
  • 1 teaspoon oil avocado, melted butter, or coconut oil
  • ½ teaspoon teaspoon vanilla
  • Pinch of salt optional

Instructions
 

  • Add all ingredients to a microwave‑safe mug.
  • Stir until smooth and no lumps remain.
  • Microwave 45-60 seconds (start at 45; add time only if needed).
  • Let it rest for 1 minute to finish setting.
  • Optional: top with a little yogurt, extra zest, or berries.

Notes

I used an allulose/monk fruit blend in the nutrition ingredients.
