
Gluten‑Free Italian Sub Sandwich
This gluten‑free Italian sub delivers everything you love about the classic deli sandwich - savory meats, melty provolone, crisp veggies, and that irresistible Italian dressing - all stacked on a soft gluten‑free roll. It's easy to make at home, customizable, and perfect for lunches, game days, or quick weeknight meals. You get the full Italian‑sub experience without the gluten, and the flavors are even better than takeout.
Ingredients
- Gluten free Italian loaf ciabatta bread or French roll of choice (4 pieces or 1 loaf. I used Udi's French rolls)
- 4 tablespoons of jarred pesto
- ½ cup mozzarella
- 4 oz of low sodium turkey or chicken breast
- 4 oz pepperoni
- 2 tablespoons Balsamic vinegar
- 1 teaspoon Italian seasoning
- 1 cup of marinated artichokes rinsed and diced
- 2 Roma tomatoes sliced
- 1 cup of shredded spinach or lettuce of choice
Instructions
- Preheat oven to 400 degrees Fahrenheit
- Slice loaf or loaves in half
- Spread 1 tablespoon of pesto on each loaf or 4 tablespoons or large loaf
- Sprinkle mozzarella evenly across bread
- Top with deli meats of choice
- Wrap loaf or loaves with foil and bake for 10-15 minutes or until cheese melts.
- Meanwhile, add artichokes to bowl and mix with balsamic vinegar and Italian seasoning.
- Once sub(s) are toasted, add artichokes, lettuce and tomatoes to sub.
- Enjoy!
