Frequently Asked Questions

Expand All:

Can I make this salad lighter, or lower in calories or fat?

Yes! Most of the calories and fat are coming from the goat cheese, pecans and olive oil. Olive oil and pecans offer a lot of heart health benefits but can be high in calories and total fat. If you were to lower the olive oil to 1 tablespoon and pecans to 1 tablespoon you could save around 50 calories and 5gm of fat per serving without sacrificing much flavor. You can add extra vinegar or a little lemon juice or water to fill out the dressing if you want more flavor.

Can I use a store bought dressing?

Yes! Any type of vinaigrette will do well- Balsamic, Champane etc.

Can I substitute the pecans?

Yes, walnuts or almond will also pair well.

Can I substitute the goat cheese?

Yes, you can use feta or mozzarella. You'll end up with a slightly different taste, but they will still pair well.
