
Easy Gluten-Free Avocado Toast
This toast makes a healthy, easy, and delicious breakfast. Great for those following a gluten-free diet, controlling blood sugars or just looking for a quick morning breakfst that will keep you full for hours!
Equipment
- 1 skillet
- 1 toaster or toaster oven
- 1 fork or potato masher
- 1 small mixing bowl
- 1 spatula
Ingredients
- 2 slices gluten-free toast or whole grain if not on a gluten-free diet
- 1 small avocado mashed
- 1-2 teaspoon s lime juice (optional)
- ½ tablespoon everything bagel seasoning optional
- 2 egg
- Cooking spray
Instructions
- Place toast in toaster or oven and toast for 2-3 minutes or desired texture.
- Place avocado in small bowl, drizzle with lime juice.
- Mash until smooth.
- Spread avocado over toast.
- Sprinkle with everything bagel seasoning.
- Grease a small skillet with a small amount of avocado oil or spray
- Turn skillet on medium/high.
- Place egg and cook until yolk sets, about 2-3 minutes.
- Flip and cook an additional 1-2 minutes or until yolk is cooked to your liking.
- Top toast with egg and enjoy!
