Healthy Gluten‑Free Peach Cobbler (Almond and Oat Flour)
This healthier peach cobbler uses almond and oat flour for a tender, crisp‑edged topping that’s gluten‑free, wheat‑free, and perfect for summer.
Equipment
- 1 large spoon or spatula
- 2 mixing bowls
- 1 8x8 baking dish
- 1 cutting board
Ingredients
- 6 cups peaches sliced
- 2 –3 tablespoon coconut sugar or brown sugar
- 1 tablespoon lemon juice
- ½ teaspoon cinnamon
- ½ cup oat flour
- ½ cup almond flour
- 2 tablespoon coconut flour
- ½ cup sugar OR ¼ cup sugar + ¼ cup allulose
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup melted butter
- ¾ cup milk dairy or non-dairy
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 375°F.
- Toss peaches with sugar, lemon juice, and cinnamon. Add to baking dish.
- In a medium bowl, whisk oat flour, almond flour, coconut flour, sugar, baking powder and salt.
- Add melted butter, milk and vanilla. Stir until batter forms a porridge-like consistency.
- Let batter sit for 5-10 minutes until it thickens.
- Spoon batter over peaches (it will spread as it bakes).
- Bake 40–50 minutes until golden and bubbling.
- Cool 10-20 minutes before serving.
Notes
Nutrition facts used regular sugar, if using coconut sugar to replace brown sugar and an allulose/monkfruit blend to replace granulated sugar, nutrition facts change to: 160 calories, 28gm of carbs, 11.5gm sugar. All other nutrition facts stay the same.
