Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
In a medium bowl, whisk together the oats, almond flour, baking powder, baking soda, salt, and cinnamon.
In a separate bowl, beat the softened butter and brown sugar until creamy. Mix in the vanilla and eggs until smooth.
Add the dry ingredients to the wet ingredients and stir until a soft, slightly loose dough forms.
For best results, let dough chill in refrigerator for 1 hour, up to 12 hours, prior to baking.
Scoop the dough into rounded portions and place them on the baking sheet, gently pressing the tops.
Bake for 10–12 minutes, or until the edges are lightly golden. Cool on the pan for a few minutes before transferring to a rack.
