cottage cheese
I used 2% milk version

cup
shredded cheese
I used 2% milk cheddar
optional add-ins
pepperoni, ham, spinach, onions, mushrooms etc
salt (optional)
I did not use any as the cottage cheese and shredded cheese add some salt and salty flavor but can add to taste.
Instructions
Preheat oven to 350 degrees
Blend Base : Add eggs and cottage cheese to a food processor or blender. Blend until smooth and creamy.
Add Fillings: Stir in chopped spinach and shredded cheese (or other toppings of choice).
Pour mixture evenly into a greased 12-cup muffin tin. Bake for 12–16 minutes, or until centers are firm and set.
Let cool slightly before removing from pan.
Enjoy warm or refrigerate for up to 4 days.
