Note
For nutrition information, I used allulose sweetener and semi-sweet chocolate chips. Using regular sugar would increase calories to 160, carbs to 18gm and sugar to 11gm.
You can add a little additional sugar if you want them sweeter. You can add up to 1/2 cup of sugar or add 1 tablespoon maple syrup.
Frequently Asked Questions
Do I need to use a gluten-free flour blend?
If you are not on a gluten-free diet, you can use a regular, all-purpose flour.
If you are on a gluten-free diet, you could also use oat flour or rice flour with some added xanthan gum for a similar texture.
How do I store these?
These save well at room temperature for 3-4 days in an airtight container. Because they have more fat than traditional cookies thanks to the almond flour, they stay moist for longer. Yes! Let them cool complete and then freeze up to three months. Microwave for 10-20 seconds to thaw.
Are almond flour cookies healthier than regular cookies?
Yes. Almond flour is naturally gluten‑free, higher in healthy fats (good for heart health), and lower in carbohydrates than wheat flour. This gives the cookies a lower glycemic impact and more staying power, especially when paired with less sugar or a low‑sugar sweetener.
